Well once again I am going to post another recipe that my family loves....and the great part is it is cheap to make. So, it fills you belly and keep your pocketbook in check.
Chicken Pot Pie
1 pound or so of boneless, skinless chicken breast (I use the tenderloins)
1 large family size cream of chicken soup
1 large can of mixed veggies (drained)
2 prepared frozen pie crust (deep dish work better)
salt and pepper to taste
First, I boil my chicken until cooked...the tenderloins only take a little time. Once they are cooked I drain and let cool. When cool shred the chicken in small pieces. In a large bowl mix chicken, cream of chicken soup and veggies together. Add your salt and pepper to taste.
Preheat your oven to 350 (or go by the pie crust package). You will want to pre-bake the crust before putting mixture in them, about 7 minutes or so (don't cook completely). I only pre-bake 1 crust, the other one is for the top and it is easier to place if not precooked. Once that is done, you place the chicken filling mixture in the precooked crust, then take the other and invert it on top of the other crust with filling. You need to press around sides to seal the crust....also, vent the top crust with a few slits. For a brown flaky crust, you may take an egg and some milk to make an egg wash, then brush on top of pie. I bake mine at 375 for 35 to 45 minutes (time will depend on your oven temp, so just watch the pie). Take out and let cool for 10 minutes or so.
This works well with mashed potatoes and gravy!!!! YUMMY!
